Coatings are applied over substrates to keep them structurally stable in a fire when under a load (steel), or to reduce the combustibility and flame spread on susceptible building materials (timber or plastic sheathing on cables). Intumescent coatings swell up when exposed to heat and form an insulation charred coat, protecting the substrate behind whilst ablative coatings release chemically bound water molecules, absorbing the energy from the fire which then has a cooling effect on the substrate behind.
